When you order beef from half calf you will be ordering some of the best locally raised and harvested beef in Central Texas. We are proud to offer grain finished beef raised by our family as well as others in our area. We select the best cattle available to us to produce the top-quality flavor packed beef we are know for. We strive to keep our beef affordable and accessible to as many as possible which you will notice in the several options we have listed. ORIGINAL WHOLE CALF

Two Beef Sides Cut to Order
Featuring top quality, flavor packed, dry aged beef from cattle raised in a certified all natural program from our family ranch in Stonewall, Tx. With the Whole Calf you can chose how you want your beef processed. Our standard cuts option will yield approximately 60% of the hanging weight as retail cuts. With this option you will receive two sides of beef that will cut down to approximately 400-500 pounds of meat total. We will contact you with details regarding processing dates and assist in filling out a cut sheet. In addition, you will need to provide a $500 deposit before harvest to ensure your harvest date is reserved and the remainder will be due upon final pick up or meet up. Typical cuts that come with a whole calf are Brisket, Chuck Roasts or Steaks, Arm Roasts or Steaks, Short Ribs, Ribeyes, T-bones or NY Strips and Filets, Sirloins, Flank and Skirt Steaks, Round Roasts or Steaks, Soup Bones, and Ground Beef. You have the option to have the heart, liver, tongue, and oxtail saved on whole calf orders.

With the Texas Sized Whole Calf you will get the same great quality of beef as the original size in a larger package at a lower price per pound. We created this option to help keep the per pound cost lower. By using a larger carcass weight the costs associated with harvest and processing of the cattle can be spread over a larger weight thus reducing the price per pound. You will have more meat with this option and you can still chose how you want your beef processed. Our standard cuts option will yield approximately 60% of the hanging weight as retail cuts. You will receive two sides of beef that will cut down to approximately 510-675 pounds of meat total. We will contact you with details regarding processing dates and assist in filling out a cut sheet if you would like to do a custom cut. In addition, you will need to provide a $1000 deposit before harvest to ensure your harvest date is reserved and the remainder will be due upon final pick up or meet up.

In addition, you will need to provide a $250 deposit before harvest to ensure your harvest date is reserved and the remainder will be due upon final pick up or meet up. QUARTER CALF SHARE
One Equally Divided Quarter Beef Carcass

Featuring top quality, flavor packed, dry aged beef from cattle raised in an all natural program from our family ranch in Stonewall, Tx. With the Quarter Calf you will receive a equally divided quarter of a beef carcass. To ensure fair division of the calf we use our standard cuts option which will yield approximately 60% of the hanging weight as retail cuts. Steaks will be cut at 1", roasts will be cut at 2", and anything that can be divided in equal portions will be such as the skirt, short ribs, and shank soup bones. With this option you will receive a quarter of a beef carcass that will cut down to approximately 110-135 pounds of meat. We will contact you with details regarding processing dates. In addition you will need to provide a $200 deposit before harvest to ensure your order is processed, this helps to purchase the fat cattle for your order and remainder will be due upon final pick up of product.

BUTCHERS CHOICE BOX

Approximately 50 lbs of excellent locally raised high quality beef!
With the Butchers Choice Box you will receive approximately 50lbs of beef as an example of what cut options could be available with larger order. Ribeyes, T- bones, and Sirloins will be cut into 1" steaks, Round steaks will be cut at 1" Chuck and Shoulder Roasts will be cut 2" thick. Flank or skirt steaks along with short ribs and soup bones will be split to as many boxes as possible. The remainder of the animal will be made into ground beef. The cattle are the same cattle as the other options, raised in Stonewall, Texas on grass and finished on grain with no antibiotics or added hormones.

We are now booking whole and half custom beef orders for June 2023 Harvest with a July 2023 pick up
Currently we have cattle that are ready to harvest. They are Hereford or Angus cross bred cattle raised on the Weinheimer Ranch in Stonewall, Texas. They are raised on grass and finished on grain with NO Antibiotics or added Hormones. Reserve your half, whole, or quarter calf or sign up for a butcher’s choice box before they're gone!
