Tenderloin Steaks are one of the most tender cuts on the entire animal. Flavorful and lean they are a must for special occasions or date night. 
Cooking- Let stand until room temperature is reached then cook over high heat until desired internal temperature. Once done let steaks rest for 5-10 minutes before serving.

Meat Facts
Tenderloin Steaks consist of one of the most tender muscles in the carcass nestled on the inside of the vertebra that makes up the short loin.  They make up the smaller side of a T-bone while the New York Strips are the larger cut on the other side of the vertebra or "T" bone.
