The steaks & other cuts are fantastic. The ground beef is similar to store bought ground beef. Sometimes ground beef from a farmer tastes night & day different from store bought, but not this ground beef. Nothing wrong with it though.
One of the biggest complaints I have is the packaging. I purchased a Texas sized half calf for almost $3,000. Upon receipt of the meat, I noticed that many of my packs of meat had already lost their vacuum seal. I reached out to Half Calf & they said it seemed like more than normal, and I could (a) prioritize eating those cuts or (b) drive from San Antonio to wherever they're located to have them reseal the packages. Both options seemed poor to me, so I went and purchased a vacuum sealer and resealed all of the affected packages. I've purchased many half beefs in the past and never had this issue. A few is understandable, but this was excessive.
Additionally, when selecting my cuts they seem to have upcharges for a lot of things. As stated before I've purchased many half beefs, but I've never been nickel and dimed so much when dealing with the cut sheet.
Overall it wasn't a horrible experience and I feel as if I received decent value, but I am going to look for beef closer to San Antonio when this cow is gone just in case I experience more issues.

Thank you for the feedback. I'm sorry our recommendation on the broken seals was insufficient please let us know what else we could do for a better solution. I did follow up at the processing plant and we found a seal that has wear on the vacuum packaging machine and ordered replacements. After reviewing your video there were about 12 packages that lost vacuum out of the side of beef. That seems like more than we normally have but not an extreme amount we would have been glad to reseal them instead of you having to buy a vacuum packaging machine. Again, I’m sorry our response to fixing the seals was not satisfactory. As far as the up charges go there is a cut sheet listed on our website that lists the up charges (Boneless Steaks, Boneless Rounds, Tenderized cuts and Stew meat). The two most common being boneless loins and boneless rounds. You had a boneless loin change and nothing more. We do not intend to spring these on you so apologies if they surprised you. I imagine the reason you don’t typically see these is most people selling beef just charge more for everyone not just the customers who select these cuts.
